If you're a leftovers-lover like me, this recipe is going to be your new favorite.
Cook box of pasta & drain.
While the pasta is cooking, make the Alfredo sauce. Add the butter and minced garlic to a pan and sauté over medium heat for 1-2 minutes.
Turn the heat down to medium-low. Add the milk & cream cheese. Heat the milk & cream cheese until it has fully melted.
Slowly whisk in the grated Parmesan cheese and continue to whisk as the sauce comes to a soft simmer.
Turn the heat down to low and season with salt & pepper as it thickens.
Add the spinach & mushrooms to a lightly oiled pan and stir until cooked fully.
Finally, add the cooked spinach & mushrooms to the Alfredo sauce.
Serve & enjoy!
