Creamy Spinach & Mushroom Alfredo

Ingredients:

+ 1 box of pasta (Alfredo noodles, penne (my favorite) etc.)
+ 1 pt. heavy cream
+ 2 tbs butter (Kerrygold is top notch)
+ 2 cloves of garlic, minced
+ 6 oz cream cheese
+ 3/4 cup grated Parmesan
+ 1/4 tsp salt & freshly cracked black pepper
+ 4 cups baby spinach
+ 1 container of sliced baby bella mushrooms

Instructions:

Cook box of pasta & drain.

Step 01

While the pasta is cooking, make the Alfredo sauce. Add the butter and minced garlic to a pan and sauté over medium heat for 1-2 minutes. 

Step 02

Turn the heat down to medium-low. Add the milk & cream cheese. Heat the milk & cream cheese until it has fully melted.

Step 03

Slowly whisk in the grated Parmesan cheese and continue to whisk as the sauce comes to a soft simmer. 

Step 04

Turn the heat down to low and season with salt & pepper as it thickens.

Step 05

Add the spinach & mushrooms to a lightly oiled pan and stir until cooked fully.

Step 06

Finally, add the cooked spinach & mushrooms to the Alfredo sauce.

Step 07

Serve & enjoy!
